Great Granny’s Coconut Cherry Balls

macaroonsSecond to sipping wine and making hot sweaty love by the glow of the Christmas tree, is Christmas baking and cooking.

Some of the joy comes from knowing I’ll be sharing my sweet treats with loved ones, and some of the joy comes from remembering the women who taught me the recipes that have become standard in my Christmas kitchen.
Here’s a good ol’fashioned down home recipe that adds a little je ne c’est quoi to your sweet trays;
1/3 cup butter
1.5 cups icing sugar
1 tsp vanilla
1.5 cups coconut
1 tbsp milk
Maraschino Cherries
Graham Wafer Crumbs
Cut cherries in half and set to drain on a paper towel.
Mix butter, icing sugar, vanilla, coconut and milk together and refrigerate, covered  until a bit more firm. (the mixture will be gooey anyway).
Roll into small balls (this recipe should make ~24), and then roll in graham wafer crumbs to cover.
Press 1/2 cherry into each ball. Store in an airtight container in the refrigerator until ready to eat.
